Question / Help [Win10] - OBS Making Games Slow

You could try to play with the x264 CPU preset, which I see you still have set at veryhigh. Though don't set this lower than necessary.
Also, I noticed that when I "upgraded" to Win10, captures with low CRF got a little choppy. Setting the CRF to 20 fixed the issue, however this came at the cost of video quality. Still, it's worth testing.
You could also attempt to use NVENC as your encoder, because that is possible with your GPU. I'm not really sure how this would affect performance, as I am unable to try it.
 
Win10 currently has performance issues. I believe Jim & Co are working to fix it, but Microsoft has released a few patches already which broke things again.

One of the hazards of being an early-adopter for a new operating system. Stuff's going to be new, and in many cases, not working right just yet.
 
I believe the only known performance issues that had a clear cause were the DX9 issues, but they have already been fixed.
 
Unfortunately, none of this is working. I don't know if sacrificing the 60fps recording for another recorder for now is worth it however. Is there anything else that seems to work?
 
You could try playing & recording at a smaller resolution―such as 1600x900 or 1280x720―until the performance issues with Win10 are solved (assuming they ever will be, because you never know with Microsoft).
Windowed mode isn't that bad once you get used to it.
 
1080p @ 60fps is a bit much for that cpu. Try either 720p @ 60fps or 1080p @ 30fps.
Also this has nothing to do with windows 10, since minecraft is an OpenGL game, there are no known performance issues with that on Windows 10.
