I have my camera output setting at 720p60 and my OBS settings to match. What can I do to deinterlace this footage?

It’s running thru an HDMI to SDI box. Down about 200 feet of SDI cable into an SDI-HDMI converter, and into an Avermedia DarkCrystal SDK Duo capture card.

Shouldn't need to deinterlace. More like there are something wrong with one of the following:
1. Most likely wrong camera settings. You can try lower resolution like 480p (720x480). Use 8-bit (no deep color) 4:4:4 colorspace. SDI have no auto-configuration like HDMI have.
2. capture card (try plugging HDMI to a TV or HDMI monitor). If lines isn't there, it is a capture card problem.
3. SDI-HDMI converter.
