Question / Help Which Xeon for Streaming (Cores/Clock Speed)

First of all, I'm not sure this is the right place for asking my question. I was looking for a hardware section and couldn't find anything.
Anyways, I have several socket 1366/771 servers available to me, and I am planning to use one for a dedicated streaming machine. If this is a completely stupid idea, please let me know :). What I am currently choosing between are 8 cores/16 threads @ 2.8 ghz, or 4 cores/8 threads @ 3.3ghz. I know for normal applications, I would get more performance from the 3.3 ghz, but would encoding benefit from more, slower cores instead?

Does one of your servers have a Graphics Card that can run OBS or space to add one or iGPU that would work?

No one really knows the relationship between lots of slower cores or fewer fast cores on the server line of Intel CPUs for OBS, because if anyone has actually tried it, no one has posted their results.

In theory the 8/16 core CPU should be better. There are diminishing returns in x264 but in theory the 8/16 core CPU isn't at that point yet, especially compared to a 4/8 core CPU.

Also, as Jack0r implied, OBS needs a GPU, and most/all server CPUs / motherboards don't have one that's good enough, so you'll need to add one on. Anything at the $100 level or higher from here: http://www.anandtech.com/show/8225/best-video-cards-june-2014 should be sufficient.
