When I record with OBS, gameplay becomes way choppier, movement doesn't look fluid

I've been having an issue with recording Minecraft with OBS. When I'm not recording the frames seem fine, and moving the screen around is fluid, but when I start recording with OBS when I move my screen it looks choppy/stuttery, and it appears this way in the recording too/ Also the recordings look way more compressed than the gameplay was. It looks way less detailed, I thought this was maybe an issue with bitrate, and so I increased it to 6000 Kbps, and there's definitely an improvement, but it still doesn't look that detailed. Should I increase the bitrate more? If so what should I increase it to? If you'd like I can include more log files, just let me know.

If you're recording, you should not be using a bitrate number at all and should instead be using a quality based rate control like CQP or the quality recording presets in simple output mode
 
This is still an issue for me. Changing the CQP, and quality recording presets did nothing.

Edit: seems like it only happens in fullscreen mode, when I go in windowed mode it's less prevalent.
