Hey, I'm currently on Windows 8 using Norton 360 Antivirus. I'm experiecened with computers, so I'm aware this may be a false positive as in order to preview the stream, the screen will be injected to allow playback on OBS or vice-versa. As this is the computer I pay my bills with, store passwords, play, buy, etc. I'm worried. I'm also using the latest build of OBS.

You can ignore it, it's a false positive. Game capture won't work any more since your anti virus deleted it, you may want to re-install OBS.
