Video pixelated (probably not bitrate, though I could be wrong)

So I was recording Minecraft with OBS, and I chose the base canvas and output scaled resolution as 1920x1080. When I recorded my game, however, some of the graphics are pixelated, and it's not sharp. I'm not talking about the video being blurry, though that might be the same thing, I'm saying the graphics aren't sharp and clean.

^ For example, the textures from far away aren't very clear, and some of the other YouTube videos I saw have graphics that are very clean and sharp, while mine isn't the best.

Are there any ideas on why this is happening and how I can fix it?

1. Run OBS as Admin. Right click on shortcut, properties, advanced, check box, ok, apply, ok.
2. Your log contains no recording session. Results of this log analysis are limited. Please post a link to a clean log file.
To make a clean log file, please follow these steps:

1) Restart OBS as Admin.
2) Start your recording for at least 30 seconds. Make sure you replicate any issues as best you can, which means having any games/apps open and captured, etc.
3) Stop your recording.
4) Select Help > Log Files > Upload Current Log File. Send that here.
 
Recommend swapping to CQP/CRF instead of CBR for local recording. CBR is only used for livestreaming as it is required for the back-end infrastructure, and is the worst method for local recording.
Additionally, you're recording using the AMD AMF hardware encoder, which is... known for poor quality overall. I'd actually advise switching to the x264 Low-CPU encoder instead, if your system is able to handle it. If not, swapping to CQP/CRF as the encoding method may help improve things, at the least.
