So we upgraded our machines from Windows 7 to Windows 10 recently, and upgraded OBS to the latest as well. Using the same configurations we've been using for ages, we're not getting unwatchable videos on our stream (and archive).
It starts in this area

The issues exhibit both on the livestream as well as even on the OBS display. I noticed the issue and restarted OBS around the start of the sermon here:

Indications of CPU overload; not affecting the encoding, but affecting your Elgato capture device. Could be CPU overload or USB bus overload.

If CPU you might try using the QuickSync encoder (QSV) instead which your machine should support. This offloads encoding duties from the general purpose computing capacity of your CPU.

So I found a setting to change to using the GPU and that seems to have fixed it!
This week we had zero problems.
I also changed it to not record to disk at the same time as streaming. I've been recording to disk since we had some internet problems a while back, but I haven't had to use the saved file in over a year, so I don't see a reason to continue doing that.
