Question / Help video capture cant handle more than 2 sources?

I have a question about obs studio. recently i use it to stream at my church. I had no problems with it until recently when I added a 3rd camera. Cameras are connected through Startech USB 3.0 Video Capture Device and whenever I switch scenes the preview freezes. It is fine however if I unplug 1 and any 2 are working fine

Are you using usb hubs?

Capture devices tend to misbehave when you use usb hubs for multiple of the same model device.

is there any settings I can play with that might help this though?

Not really, you need to move devices around so they're on root hubs rather than external ones.
