OBS Studio creates a log file each time you run it which contains very useful diagnostic information. Without a log file, it's much harder for any support volunteers to figure out problems and your post may be ignored. To upload a log file, go to the Help menu > Log Files > Upload Last Log...

That system has a U-variant CPU, which sacrifice computing performance for better battery life, and no discrete GPU.
Real-time video encoding is a very computationally 'heavy' task, with the overhead of multiple camera video streams (which have to be decoded by the CPU as well).
Recommend swapping to the Veryfast or Ultrafast preset instead of the Faster preset currently in use, to reduce CPU load.
You also show minimal rendering lag, but there isn't much that can be done about that. Chances are good that the camera inputs may be causing this as Droidcam and the EOS webcam app are not great performers.

What is your content? Organ? Calm musicians? Something else?
If 2500 kbps is enough depends on the movement and changes within the video content.
You can help to fit 2500kpbs better to your needs: Change the video fps from 60 to 30 or 29.97.
Then in the single log you sent there is a video output resolution of 1280x720 what sound typical, but your encoder settings say something like 818x460 which is quite unusual. Do you have rescaling activated in the encoder settings?
If so, your lean machine has twice the effort than needed. Because you stepdown from FullHD (1920x1080) to 720p in the first step. Later then the encoder has to rescale again to this 818x460 thing.
Disable rescaling in the encoder settings and try to go with 1280x720p30 as output and look for yourself if 2500kpbs fits already your needs (again: depending your content, see first question above).
