Question / Help Using server to run stream?

I play on Xbox One and run stream thru OBS. looking to build a better computer to run it since my AMD setup is struggling a bit.

I'm considering running xeon server CPUs since i can get them relatively cheaply.

Anyone have any wisdom on using them instead of say a to tier i5 from intel to run steam?
