Using OBS for security fotage storage

I'm new to OBS and want to use it with my Nest camera. I have it all setup and working. I'm able to record videos

I want to keep my recording files as small as possible and break them up in hourly files so that I can create a script in Windows scheduler to delete old files base I how long I want to keep them.

Can someone guide me on what settings to us or perhaps there is a better option out there to use? I have a large NAS drive to disk space is not a problem

OBS really isn't the best tool for the job for that. You're better off getting software designed specifically for security camera handling.

Stuff like shinobi video or blue iris would be my first thoughts.
