Hi, I'm new to obs studio and I was wondering whether I could use it for my project. I'm trying to record video( approximately 5 mins at 30 fps) from two webcams and from those two recordings my plan is to get the video frames from each recording and merge them together to create a new set of frames. I was wondering if I could use multiple instances of obs studio(using the -multi method that I've read), set one webcam( 2 Logitech HD Pro c920) to each instance and use hotkeys to record both videos at the same time. Any tips are welcome. Thanks!

You can create a video with both and use a postprocessing software to split/merge them.
Example: if you currently use a canvas+output resolution of 1920x1080 for one webcam, double it to 1920x2160. Create 2 sources for your 2 webcams with 1920x1080 each. Place one webcam on the upper half of the canvas and the other on the lower half. Record this. In postprocessing, you can cut the upper and the lower half separately and use them as you like. Since they are in the same video file, they are perfectly synchronized and you only need one instance of OBS.

Thank you for your response! I added both my webcams as sources in one instance of OBS and yes I had both canvas and output resolutions at 1920x1080 for both webcams. But in settings > Video all I can select for the Base Canvas and Output Resolution is 1920x1080 and not 1920x2160. How should I proceed?
