Unable to output with AMD encoder

I've browsed countless forum posts with this same issue, most of the answers were:

• Clean reinstall of gpu drivers (with DDU).
• OBS reinstall
• Installing AMD encoder plugin

Nothing I try works though. Tried with multiple settings on the output section but nothing works.
When I start recording/streaming it either tells me to update my gpu drivers (are up to date and, at the time, on a fresh clean install), or it just crashes (usually one first, then the other).
