Network: 25 mbs/s

OBS SETTINGS:
Downscale: 540p 30FPS
Downscale Fliter: Lanczos 36 samples
Bitrate: 1500
Encoder: NVENC

Every time I start streaming, the stream is 100% fine, then 2 minutes later the bitrate drops to 0 and the dropped frames gradually rises.

Ive tested this with and without a game on screen, task manager says nothing is taking up more than 50% of resources to stream, even when everything nosedives.

I'm confused as to what is causing these streams to lose such quality after 2 minutes? It never goes back up.

Any help is much appreciated!

You're streaming over wireless, connection quality is never guaranteed due to interference from other signals. Judging from the signal rate you're using 2.4 GHz, try forcing your router or wifi card to 5 GHz as this generally has more bandwidth and less interference.
