It seems that the "Projectors" - is the feature you need for a video sources. More about OBS projection of different sources to different display devices and to standalone windows: https://obsproject.com/kb/power-of-projectors . If you have only one display device and the game running fullscreen - then no go. Sometimes it is possible to send some info (audio/video feed as well) to the smartphone or to other device via network (look for "OBS websocket", "NDI", "teleport", "VLC multicast" etc).
If you need to hear audio source on the same PC then look for the "Audio Monitoring" feature of OBS.

you can use obs’s projector mode to show the preview outside obs, which makes it easy to keep the same content visible while working in other apps.

Yeah, you can do that pretty easily. Just right-click the OBS preview and use Windowed Projector (Preview), then keep that window over whatever you’re doing. If you only need one thing from the scene, you can right-click that source and use Windowed Projector (Source) instead.
