Suggestions for best setup?

Sorry if this is in the wrong section. I couldnt find a better section to use.

Question: I'd like recommendations on the best setup here that will be reliable.

Context: I am in charge of streaming and recording a Club Volleyball season. They will be mostly in convention centers. Wifi and cell coverage is a big unknown.

NEED:
1- Live stream with a scoreboard to family and friends. Facebook/Youtube
2- Raw output to be uploaded to HUDL for stats and score processing

I was thinking about doing a multiple (2 or 3) camera solution. One dedicated to streaming and another just recording the raw footage on local storage for uploading later.

CONSTRAINTS:
- Wifi and cell coverage is a big unknown. Willing to get a Cell Hotspot.
- Cameras will be on a tripod on one end of the court and would like to not have to stand there next to it
- I will have a large battery solution so I am not worried about powering the cameras

WHAT I AM THINKING/wanting:
- Want to get a controllable PTZ mount for the tripod
- A wireless view into the cameras to ensure they are recording or if they need attention
- Ability on the live stream to put in overlays and scores

Here is what I am thinking. Any thoughts on this? Am I thinking about this wrong?

I've seen (and commented) on a number of Live-streaming of such competitions/matches (not necessarily volleyball, also martial arts, cycling, etc)

My $0.02 - don't count on WiFi... for anything. you are just asking for trouble.. and unless you are experienced with wireless packet sniffers, WiFi frequency monitoring, etc... just don't

A number of cellular hotspots allow a USB connection to the PC... much more reliable than using WiFi, especially in an environment with potentially lots of people, and their WiFi enabled mobile devices (I'll skip long discussion of why older WiFi clients can force hotspot/access point to slow down)

And when I looked into livestreaming and using my nice camera, it quickly became apparent that getting a PTZ camera was a much better option. I got a NDI PTZ camera. You can get PTZ cameras that connect with different technology (USB, HDMI, SDI, NDI), so depends on OBS computer, distance to cameras, and more which connection technology may make more sense
I'd be inclined towards cameras direct into OBS PC, using local camera SD card storage as a backup (no switch in the middle).
A big consideration is low-light sensitivity. Getting a DSLR/mirrorless camera with a low-light liens gets expensive, then PTZ controls on top of that. Cheaper to get a quality PTZ camera.. unless you already have the camera and don't need remote zoom control

but I know I'm biased, and thinking how I'd put together the content, and that could easily not match your expectations, so my thoughts may not apply to you.

1) For Switch / Record i suggest Atem Mini Pro ISO or similary products.
2) Add graphics on computer
3) For internet access buy or build own bonding device, i build device with 4 modems LTE with antennas.

To this device i can connect additional cable networks.
