Streaming makes everything crash, from game to OBS to entire pc

Back in October I build a new pc:
I7-9700k
RTX 2070 Super
16GB

After this I started creating content for youtube. I used OBS to record my gameplay videos at 3840x1080 (camera and gameplay next to each other so I have one file) at CQP 16. Never had any issues.

At the end of November, I decided to expand my content into streaming. I created a layout etc. In my first 2 streams I streamed Destiny 2. It went flawless. No crashes, no lag,...

On December 9th I decided to do my 3rd stream and change to AC Valhalla. Most of my YT videos were about AC Valhalla and during recording, everything was smooth and I ran a solid average of 55fps on Ultra High. But streaming? That was very different.
The first thing I noticed was increased loading times in the game. Up to 2 minutes. My frames had also dropped to around 30-35. And than it happened... 5 minutes into the game and it froze. I restarted the game and loaded a previous save. The day before, my game crashed at that exact moment. But again it froze, even with the old save. This time freezing OBS as well. I restarted my stream and game. Again, within a few minutes the game froze together with OBS. I tried one final time and the game froze again within minutes. One entire hour of streaming dedicated to crashes and restarting the stream...
I also noticed my CPU was up to 100% when running OBS and the game together. Tired of crashes, I decided to play a different game for the rest of the stream and started streaming AC Odyssey. That wasn't smooth either. While I didn't have any crashes, my game was running at 20fps.
Which made me think; perhaps my computer was just tired of running all day and needed some rest? Perhaps there was a lot of junk running in the background.

So on December 12th I tried again. I restarted my pc 5 minutes before the stream, to have as little running in the background.
Here we go; booting up AC Valhalla with graphics said to High instead of Ultra and the stream output to 900p instead of 1080p. And within 10 minutes... It froze. I rebooted the game and lowered the graphics even more; to Low. It had to restart the game because of this and... This is when OBS froze. Restarted OBS, the game and my stream. Graphics were now horrible and strangely enough, I only had a 2 fps boost from Ultra. 34fps on Low... But it didn't matter. Within 5 minutes froze again. To make matters worse; OBS damaged the drivers of my AverMedia Capture card. I called it a night and went to ask help on Reddit. Got the standard things here like "Use NVENC"

One of the things I noticed, even without OBS AC Valhalla was using 80% of my CPU. And this is when I noticed it; I hadn't frame locked the game. So I locked the game to 30 fps and set graphics to High. The game was now hitting 50%. A huge improvement! I also slightly overclocked my CPU by 38% (through AI, not manual)

Wednesday December 16th with all the changes, I was feeling confident. I started my stream, booted up AC Valhalla aaaand... I was hitting 97% on my CPU instead of a constant 100%. An improvement right? Apparently not. Within 5 minutes OBS crashed. Like, actually crashed not freezing. It asked me to generate a crash report so I did. Restarted OBS, as admin this time and started streaming again. But 3 minutes later, OBS crashed again. And this time, it broke my AverMedia drivers again.
Since Destiny 2 streamed without issues, I decided it had to be the game. And I started the stream again but this time as Cyberpunk 2077. First thing I noticed? CPU was running below 80%. It must be AC Valhalla right?! The CPU either! I streamed perfectly fine for 1,5 hour. And than... My pc froze entirely...

I have given up on streaming until I can fix this problem. But one if the things I noticed; it only happens when I stream.
So far I have recorded 16 hours of gameplay in AC Valhalla through OBS, with the game crashing only once (the day before streaming). And I ran another test yesterday; I had OBS run with my setup while playing AC Valhalla at high graphics. Only difference? I wasn't streaming. No issues and CPU didn't go above 80%. But when I start streaming, for some reason both OBS and the game get a 10% increase in CPU usage.

I feel like my CPU should be strong enough to do single setup streams... Yet I can't
