I am using OBS 29.1.2(64bit) with MacPro Ventura 13.4.

I want to record video including audio that is on the screen of the Mac.

All information I look into about making a recording seems to be out-of-date because of the changes OBS continues to make it easier.

Under “Sources”: What source do I use that is compatible with Using OBS 29.1.2(64bit) with MacPro Ventura 13.4.

Is there a current video or instructions using these parameters?

The new stuff also has problems. May or may not work for you, and not much of a solution yet, if it doesn't.

Slightly changing the problem: if you were to hook it up to a TV, and have both the picture and sound come from that TV, then you would want to simply record the TV just like you could with an old-school VCR?

To do that, without the TV, you'd have a screen/display capture for the picture part, and a Desktop Audio source for the sound part. Think of those two things separately, because in serious media production, they are.

Remove/disable everything that you're not using, and set the rest to a specific device, not Default.

Did "macOS Screen Capture" not give you an audio stream and a video stream? Do you have a default audio device configured?
