You need an HDR capable system and the still in beta latest version of OBS.
You may use an external codec which supports it. It should be guides out there to know how to do this.
I have an HDR capable system, i've got i7 12700, rtx 3080 ti with hdmi 2.1, and monitor is LG2795r and that is HDR 600 verification.

OBS Studio creates a log file each time you run it which contains very useful diagnostic information. Without a log file, it's much harder for any support volunteers to figure out problems and your post may be ignored. To upload a log file, go to the Help menu > Log Files > Upload Last Log...
The upcoming OBS 28 is the first version of OBS that supports hdr. The current 27 and older ones don't support it. If you're willing to test the beta 28, check https://obsproject.com/forum/list/test-builds.20/
There is no user friendly documentation, no polished guide yet how to not only just record but also actually produce (including postprocessing and distributing) hdr video with OBS 28. It's a brand new feature.
EposVox touched it briefly with his OBS 28 beta review. In essence it seems you need to use one of the new hdr color formats and a hdr capable encoder (if you now ask which ones, wait for a guide).
