Running 64-bit stable version
I want to open up media files. I open one with a media player, either vlc or gom.
I add software capture to the sources for the media player window, but when I preview stream I get nothing but black screen.

Make sure you add a source by right-clicking the sources area then Add -> Add Software Capture, not by using the Global Sources button.

Delete the source then add it again while having the media player window opened. If it doesn't work then post a log file to see where the problem may lie.

Nothing seems wrong with the log file. Only other suggestion I can say is try the 32-bit version of OBS but I don't believe it will fix the problem. I'm sure another person can find the error that I'm not seeing.

I've never actually been able to successfully window capture Windows Media player, only VLC

Basically unzip everything to your OBS room install directory. Put the contents of the zipped plugins folderin your OBS plugins folder, and put the other files in your root OBS folder.
