Skips/loss of recording while in OBS - Help

Hey everyone, kinda stuck here... so I'm currently running an ElGato HD60Pro on Win10 recording my Xbox Series X gameplay through OBS. I'm not streaming at all, for now, just recording.

Intel(R) Core(TM) i7-8700 CPU @ 3.20GHz, 3192 Mhz, 6 Core(s), 12 Logical Processor(s)
NVIDIA GeForce GTX 1070
Recording to a (Samsung 500gb T5 SSD)
Also tried my C: drive with the same recording issues
Source is 1080p60 -- I've experienced this while recording in OBS at "High Quality" and "Indistinguishable Quality" (settings in screenshot)

With the hardware I have and the way I have everything set up, should I be able to record video at this quality without the video/audio dips? I'm continuously getting "lag" spikes and/or frame drops in my recordings that I'm not experiencing while playing in-game on my Xbox.

It's having an effect on both the audio/video being recorded. Any ideas? I can upload clips of the recording if that would help, it's such a quick cut it can be easily overlooked if you're not paying attention, but I definitely notice it when editing the video/audio.

I seem to be noticing it more in the audio recording than the video after setting "Common FPS Values" to 59.94fps.

That may have helped or fixed the video, but still experiencing audio drops and complete cutouts of sound when recording. I can see the mixer drop to the bottom randomly.
