Question / Help Size and resolution

I was another thread on how to make OBS record in higher resolution and get rid of the black bars on each side. Well, I was wondering, how would I do this if I am trying to record/stream a game without a resolution setting, ie Minecraft or Kerbal Space Program. Because I record videos for KSP creations, and they record in low res and have the black bars. Also, I am still slightly confused on how to increase the quality of said videos. Could someone please help?

Both Minecraft and Kerbal Space Program have controls for setting their resolution. In Minecraft you set the resolution by clicking the Edit Profile button in the launcher (resizing the window will change the resolution, switching to full screen will set it to your monitor's native resolution). In KSP you set the resolution in its options panel like you would for a normal game.
