Question / Help Simple/Indistinguishable recording output at wrong resolution?

Newb here, so very likely user error.
Fresh install of OBS 18.0.1 (64bit).
Settings -> Output - > Simple -> Recordings:
Quality: Indistinguishable
Format: mkv
Encoder: Software (x264)

Source: Game Capture
Capture Specific Window

Desktop resolution is 1920x1080
Game resolution is full screen 1920x1080

Recording looks great, nice and smooth, however, when I view the properties it shows that it's recorded at 720:

Where is OBS getting that 1280x720 resolution setting from?

Downscaling under Settings > Video I assume, but you didn't provide a log file.
