Question / Help Screen Freezes during recording but Audio is fine

Hey, I've been having an issue while recording some series with OBS. When I record some of my series for YouTube the video freezes but the audio continues playing. I switched over a while back from 1000 encoding/buffer to 4000 encoding/buffer to improve the video's img quality (was trash at 1000 for many series I'm doing) but now whenever I record some series I have this issue repeatedly. However, on other series this problem never occurs at all, even with the improved encoding/buffer rates. Can anyone help me out with this? Is there some kind of fix I can do that will work for all the series? Will each game I'm recording require different settings? Please, help!

I've attached a log for a test-recording for the newest series we're starting up (Minecraft Pixelmon Mod).
As a bit of irony, when I did my 6 min test run for the log... this never happened! When the encoding/buffer was set to 2000 when I was trying to improve it while avoiding this, it did! That being said, I'm not overly surprised, since I had similar things happen when I recorded The Vanishing of Ethan Carter @4000. Sometimes it wouldn't start occurring until 10-15 minutes into an hour long session, but then it would happen for chunks of between 30-60 seconds every 3-5 minutes! :( Conversely, when I've used 4000 for NFS: Most Wanted (2005, Black Edition) I've never had this issue happen.

Hopefully the log can give someone the insight to help me fix this anyways! It's been giving me a LOT of headaches as I try to run different series! The log below includes the past hour of testing, including my run at 4K and 2K for Minecraft Pixelmon Mod.

OBS Classic is no longer supported, you should switch to OBS Studio.
Recording 1080p 60fps is also quite cpu-intensive and your bitrates are way too low.
