You're seeing that cascaded effect because you're capturing the entirety of the display with OBS still visible on it -- that is normal.
If you have another window on top of OBS, it will capture just fine. If you're needing to capture a separate monitor, make sure to select it in the drop-down menu in the display capture source's properties.

Minimize OBS, or put it behind the window you're trying to capture. It will continue to record.
If you need to have OBS up in the foreground while you're recording, then you will probably need to use a window capture source instead of display capture. Display capture will always capture exactly what you're seeing on the monitor, in its entirety.
