Question / Help Render Lag When Recording 240FPS using the NVENC Encoder

I get extreme render lag when recording Battlefield 5 gameplay at 240 FPS @1080P using the NVENC Encoder. The footage comes out extremely choppy and looks like it's been recorded at 5 FPS.

The log file shows:
14:59:37.246: Output 'simple_file_output': Total frames output: 2942 14:59:37.246: Output 'simple_file_output': Total drawn frames: 2627 (3743 attempted) 14:59:37.246: Output 'simple_file_output': Number of lagged frames due to rendering lag/stalls: 1116 (29.8%)

My game FPS is around 180-250 FPS (depending on the area, goes up and down as I run around) so I wouldn't think I'm overloading the GPU or anything.

I have a RTX 2080 Ti, i9 9900k, and 32GB RAM so I don't know why it's performing so poorly. I have seen Fortnite videos where YouTubers record @ 240 FPS using the NVENC encoder and do not have this issue. I would like to record at a high frame rate for smooth motion blur. I can use the Software x264 Encoder but I lose up to 60 FPS ingame.

Also, I have tried to use the old and new NVENC encoder in advanced output settings but it's around the same.

Any help would be appreciated, thanks.
