Recording Gets Stuck In Low Contrast Picture after cutting to next piece of content

Here's my issue:
I'm recording from a HI8 (8mm) camera to digital converter (the cheap USB 2.0 one from Amazon). The video is recording fine, colors look accurate, etc. Once the recorded content cuts to black screen, then starts again, the contrast is all messed up. This is on an old Sharp Hi-Fi handheld camera with a preview screen. In the preview screen, you can see that the colors are messed up for a second when the next piece of content starts, but is then quickly corrected, however it doesn't correct itself in OBS. This problem doesn't always happen when switching from a cut on the tape to a new piece of content. It happens randomly at different spots when the content cuts. What I've noticed is if I hit rewind on the camera, the colors correct themselves in OBS in the recording. If I unplug the AV cable from the camera and plug back in, the colors correct themselves.

FWIW, i've read everything I can on this issue and it appears it's not happened to anyone else, or I don't fully understand similar issues.
I've got color format on NV12, color space on Rec. 709, and color range set to limited. I've also had these settings reflected in the video capture device (Source). I've tried like a bazilion different combinations of settings...the problem thats frustrating me is, I got one good recording of this issue not happening once, however it was a wrong aspect ratio.
