Question / Help Recording Both Game and Webcam in Separate OBS Windows

Hi, all. Hoping I can get some help here.

CPU: i7 6700k
GPU: GTX 1070

I've been able to record both my gameplay and webcam in separate OBS windows for less CPU intensive games like Getting Over It, Cuphead, and Outlast in the past without dropping frames in game or on OBS. Essentially, I have a recording profile where my scenes are my games and then I have another OBS window open with a Webcam profile where the only scene is my webcam. Before you ask, I like to get 2 simultaneous recordings of my gameplay and webcam for more freedom when editing.

But when I try doing so for games like Hellblade: Senua's Sacrifice and even Fortnite, I notice that OBS can't keep a steady 60fps and records around 30-48fps. It's important to note that I don't experience any in-game fps drops.

I've changed my settings so many times, I can't remember what worked in the past for just 1 OBS Window, so I'm turning to the forums for some help :)

My questions are:
1. Is there a better way to record my webcam and gameplay simultaneously?
2. What settings would you recommend for my setup for each recording (gameplay and webcam) so OBS doesn't stutter. I'd like to keep my gameplay at 1080p 60fps, but the webcam can go down to 1280x720 if my PC can't handle it (I've tried that also, but it didn't help)

Did you install the latest Windows update? Me and many other people are having trouble maintaining 60fps streams/recordings, check out this thread: https://obsproject.com/forum/threads/lag-fps-drops-with-obs-open-windows-april-update.84514/
Hmm, I heard about this.

I was having this issue with other games before the update, however.

I have it when I record my webcam and gameplay while playing Fortnite, PUBG, and Assassin's Creed Origins.

I noticed, however, that if I'm just recording one video (webcam OR gameplay), my fps is stable, so I guess narrowing my question would be:

How do I effectively record my webcam and gameplay as two separate videos (more freedom when editing) without OBS crapping out on me and recording at 20-30% fps?
