I stream on Twitch. But I also record my streams. Is there a way to record a single source? So my cam and overlay aren't recorded as well? I know I can run two instances of OBS. But that is very taxing on the CPU.

I worked with another gent on this same issue. set your streaming instance of OBS as normal. your local record instance can be either NVENC(Nvidia Only), Quicksync(Intel only) or VCE (AMD only). If you have a GPU or CPU that supports one of those you can use that for your local recording and not tax the CPU more.
