Recording a game running 4098x768. Looking for a guide to instruct how to set up the recording window.

I'm recording a game I play that runs on 3 monitors using a nVidia GEForce GTX 1070ti. I usually only record the center screen size but I'd like the option to record the full 4098x768. Is there a guide I can refer to? I'd like to have a shortcut to go from one view to another.
