Question / Help Record with two mics?

Is it possible, or any future plans if not, to record with two separate microphones simultaneously? Either within OBS itself or using some type of software that will create a virtual mic out of the two that OBS can use?

Hello.
With a software called Virtual Audio Cable you can take two microphone sources and send them to the same virtual line and then use said line as your input in OBS.

Ah yes, I've heard of that software before. Sounds like that will be my best option. Can I use the software on the fly? As in can I just start it up when needed and it only takes affect then? I'd like to keep things the way they are until I want to run both mics, which will be rare.

Yes, you would simply need to run any number of instances you need of the software, select inputs for them and direct them to the output. In your case two instances taking each mic and sending them to the same virtual line. When you close the software, it's gone, nothing else is affected.
