How can I record my cursor on "images" and "video capture device" scenes?

Thanks, but the that option is not available for my sources: camcorder and image.You can Right-click >> properties >> capture cursor.
If that options is available under the source, turn the cursor capture on and off as you like.
Some conceptual remarks: projector windows are outputs of OBS Studio. A cursor over it can be annoying in some use cases, hence the option to hide it, but it won't in any way get the cursor recorded. Just as moving your cursor over a YouTube video won't get it recorded into that video.
In order to get your cursor recorded or streamed, you will have to get it into your scene in OBS. So one of the sources needs to capture the cursor. Some source types do have that Capture Cursor setting, like Display Capture and Window Capture where you will get everything happening within that window. But images and video capture devices do not, since there's no cursor natively over a webcam.
To "just capture a cursor" you will need some 3rd party tool, although I do not know them. Another way might be to have the images and video capture's output shown on your screen and have a Window Capture or Display Capture to record it.... with the cursor. The graphical quality might be a little less, depending on the available monitor screen for that. Also be aware about the captured window/display's dimensions in relation to your output screen.
