If i wanted to have obs record the audio from another set of programs then i was listening to in my headphones would it make sense to plug in another set of headphones and use windows stereo mix to play the audio in the second set of headphones then record that?

If you want to capture the audio from some set of programs, can use the "application audio capture (beta)" source to capture these applications with OBS and only record these. An alternative solution is to configure these programs to output their audio to some specific audio output device no other application or Windows sound does output to, then capture this output device with OBS. This output device can be any output device. If you don't have any free device, you can plug in a second headset to have an additional one, or you can use some virtual audio device to create one.

Wouldnt a virtual audio device use more cpu than a second headset as the soundchip would do that?

No. For today's CPUs, audio processing is light-weight. It's just moving data from input buffer to output buffer, no matter if it's a physical device or not. I guess physical devices have even more CPU demand, because data has to be moved to some output port, and that's slower than just a RAM-to-RAM transfer.
