Random frame drops in OBS

I'm trying to record gameplay footage and have tried several settings to record at 1080p 60 fps.
The issue i'm facing is that OBS recordings have 1-2 second frame drops but they're fairly far apart yet close enough to ruin the experience. I'm not sure what the reason is but I'll post my settings and specs for reference

i3 10100F
GTX 1050ti
16 GB DDR4

OBS Settings:
Encoder: NVENC (Tried x264 but wasn't quite working)
CBR:10000-20000 Kbps / CQP: 14
Key frame interval: 2 (I've tried 1 and 0 too)
Preset: Quality (I've tried Performance, Max Quality and Max Performance)
Profile: main (tried high)
Look Ahead: Unchecked
Psycho-T: Checked
Max B Frames: 2

Downscale Filter: Lanczos, I've tried Bicubic and the others too
FPS: tried 30 and 60
Resolution: tried 720p and 1080p


I'm not sure what I'm doing wrong with OBS or why the frame drops happen. Can anyone offer some insight because youtube videos aren't helping
 
With NVENC you should go for something more friendly with your system.
CQP 20 (recommended between 15 and 23, so 20 is a good start)
Key frame interval: 0
Preset: Quality
Profile: main
Look Ahead: Unchecked
Psycho-T: Checked
Max B Frames: 4

Probably you can manage to do a good 720p 60fps or 1080p 30 fps
