The crash it's on a custom dock or browser source. Probably one of the added by one plugin.
Some plugins likes to put files (and never remove them) in %appdata%\obs-studio\ path. Uninstaling and reinstalling OBS don't remove this files. you need to manually look and delete them.

There is not a folder named "path" on my %appdata%Roaming\obs-studio (there also ins't a %appdata%\obs-studio folder).
The only plugin-related folder I saw is %appdata%\Roaming\obs-studio\plugin_config , and the two folders named after the plugins I use are basically empty, there is only a config.yml file in one of them.

Did you identify a plugin causing an issue?

A path, not a folder. You now, well known operating system gibberish
That's why the word path is separated from the path %appdata%\obs studio\
%appdata% is short for C:\Users\username\AppData\Roaming (replace "username" in this path with your operating system user name)
And yes, the path %appdata%\obs studio\ exist. Notice the space before the word exist.

Any leftover file from a plugin you want to completelly remove must be deleted, even the folders they create and fail to remove. Also any custom dock or browser source created by the plugin that remains active after uninstallation.
Streamelements plugin comes with it's own uninstaller that you must run and then delete this leftover files in the path above mentioned.
By the way, they have support for their own products.

I haven't got any Streamelement plugins installed, I did install one months ago for a day and then removed it after it not being of use for me.
So there are leftovers from that singular day that are making my stream crash today?

The only plugins to my knowledge that I have installed on OBS are audio-monitor and sourcerecord
