Other thought on the issue (a bit older OBS but similar CPU family and similar crash log):

OBS keeps randomly crashing (with Cities Skylines 2)

Today, Cities Skylines 2 was released, and I installed it from the Xbox Store on my PC because you get the game for free. However, my experience with it tonight has been filled with a lot of issues. It seems that while I'm streaming, OBS keeps crashing. I initially thought things were improving...

That's scary. Those updates keep you from getting hacked. I would not trust any machine on the internet without the latest ones.

So if an update kills an app, you could be screwed either way.
