What does the audio track options 1 2 3 and 4 do in the recording tab of output? If I select 1 and 2 will that make my game audio and microphone audio separate?

That makes 2 tracks in audio file.

To determine what sound devices should be mixed in this two tracks (e.g. separate sounds) you'll need to check different devices in main menu Edit>Advanced Audio Properties for this two tracks (for example track #1 = Desktop Audio, track #2 = Mic only checkboxes).
