Having multiple options at the same time is not a function of OBS, it's a function of Twitch. Read more here.
If you have a specific different option you want to stream at, you can use Settings -> Video -> Resolution Downscale (in OBS) to specify a different resolution. However, as I said, this will be one specific resolution; you need Twitch Partnership to have multiple resolutions at once.
