Q/Help - Game recording lags at random places for random durations

Hello there. My game recordings lag here and there for few seconds every time. In between those lags the rest of the video is smooth. I've tried every different combination of recording settings, different encoders (x264, Nvenc new), rate control (CBR, VBR, CQP), bitrates (6000- 20000), presets (from max quality to max performance), process priority (normal, above normal, high), different numbers for keyframe interval, max B frames, ticking and unticking look ahead and psycho visual tuning ect. None of them works. I've tried all sorts of recommended settings from youtubers, some of them claim to have older hardware than me but I can't record smoothly even with those settings. Can someone tell me what's wrong. Thanks.
Specs - Ryzen 5800x , Zotac amp hollow RTX 3070 Ti, 16 GB DDR4 memory, seagate barracuda 2tb hdd
