Are you using an old, under-powered, thermally constrained laptop, optimized for battery life, not the computationally demanding task of real-time video encoding? Or leaving lots of Apps and browser tabs open so your system doesn't have any RAM to work with?
I recommend monitoring hardware resource (CPU, GPU, RAM, etc) utilization [for ex. using Task manager’s Performance tab and/or Resource Monitor] to see if your system is being maxed out with your settings

Please post a log with your issue! Here's how...
OBS Studio creates a log file each time you run it which contains very useful diagnostic information. Without a log file, it's much harder for any support volunteers to figure out problems and your post may be ignored. To upload a log file, go to the Help menu > Log Files > Upload Last Log...

You are using the Beta, not the released, version of OBS.
You should ask on the release candidate thread, or update your posting to indicate this is in regards to the 27.1 RC
Also that log didn't show a record or streaming session. you may need to post a crash log
