Hey!

So when I have decided what encoders to use, what profile should I select? What does the profiles do? What is H264? Thank you!

Profile is kind of compatibility restriction (https://en.wikipedia.org/wiki/H.264/MPEG-4_AVC) as soon as you are using fast PC you can choose highest available profile. If you targeting YouTube service, make sure that uploaded video conforms to: https://support.google.com/youtube/answer/1722171?hl=en
