Your monitor is 5:4 aspect ratio
You want 16:9 aspect ratio.

You can get it BUT your image will be deformed

Way to get it:

Canvas 1280x720
Rescale 1280x720
Rescale filter Bilinear (you are not using it as you don´t rescale)
FPS 30 or 60 depending on your PC

Sources: CTRL+S what is Transform Stretch to screen.

OTHER option:

Canvas 1920x1080
Rescale 1920x1080 or 1280x720
Rescale filter bicubic or lanczos if you rescale
FPS 30 or 60

When you get your game / monitor, adjust to one side via CTRL+ F Transform Fit to screen
You will have a lot of black space on one side.
Use this space for webcam, alerts, chat, etc....

16:9 native monitor, 1920x1080 usually:

canvas 1920x1080
resize 1920x1080 or 1280x720
FPS 30 or 60

You can resize to 720p 60 fps at 3500 bitrate
Or 1920x1080 30 fps no rescale.

If you don´t rescale, you have more CPU power to encode and get better image

But with your 1280x1024 monitor with 1920x1080 canvas you get only a reduction in quality because your 1280x1024 game converts to 1350x1080 that causes a bit pixelation.
You can use 1280x1024 and use an overlay sorrounding it. This will give the best quality for your game.

You should force the source resolution to 16:9.
Either you set this kind of resolution in the game itself (look for: 1280x720, 1360x768, 1366x768) or cut off unneeded pixels in OBS via crop.
If your source (camera) produces stretched image by default and you wants to correct this, then apply Filters>Effects Filters>Scaling/Aspect Ratio and set desirable aspect ratio of the image to the field Resolution (type it manually).

Just in case, OBS Studio Help Guide: https://obsproject.com/forum/resour...ware-studio-multiplatform-help-guide-pdf.365/
