So currently I only have one monitor, and I want to be 100% sure that this can be done with one monitor before I scrap the idea. For Window Capturing, when I try to capture for example my music player, it only shows the music player when it is in the foreground and not covered up by say a game. Any way of fixing this?

Turn on Aero, and make sure the music player (or window you want to capture) isn't minimized. It can be covered by other windows at that point and still be picked up without interference, as OBS window cap will pull from Aero's offscreen texture buffers (aka: grab the window contents directly from Aero, regardless of desktop composition).
