For your request, I propose you connect a second monitor and move OBS there, as well as every other software you use but don't want to be part of the recording. So you can monitor what you will record.
How you record your software while you're working depends on the software and on your workflow. If your software contains one window, you might capture it with window capture. If your software cannot be fully captured with Window capture, or consists of many windows, or you will switch between applications, you will probably use display capture for the whole monitor you're working with.
