Picture Clarity and Stuttering issues

Hello, Im trying to record minecraft PVP content at 120 fps or higher at 2k, and im running into issues, i brought the fps down to 60 and the resolution down to 1080 and im still getting stuttering and quality drops, im currently running a 3080 and an i7-11700k so i dont see it having issues running the 2k 120 fps, let alone 1080p 60.
