Question / Help Optimize stream settings / remove grainy look when moving

Hey guys! I am quite new to streaming and I am currently trying to optimize my OBS settings to run best possible quality on twitch.

My pc specs are as follows:
CPU - i7 7700k running at 4.6ghz
GPU - NVIDIA GeForce GTX 1080 running at 1850-1950MHz
RAM - 32gb

My internet connection according to Speedtest is:
Download - 219 Mbps
Upload - 20.89 Mbps

I tried all kind of settings for both the cpu encoder and the gpu encoder and roughly I get the same problem. The stream is crystal clear and smooth 1080p 60fps (running 6000 Bitrate) but the second I move around (e.g. in Fortnite) the game becomes slightly grainy. Is there a way to fix that? And is it better to run the encoding on the cpu or the gpu? Side note, I am running a 1440p at 144hz (yes, it does exist) which it does put quite a bit of pressure on the gpu to maintain 100-144fps in game. Thanks in advance!
