Question / Help OBS won't run minecraft, when it did before.

Hello.
I've read a couple of the "OBS won't run minecraft" threads, and none of them offer a solution to my issue and (I feel) unique circumstances. I'd like to preface this by saying I use to be able to stream and record Minecraft WITHOUT FAIL on Display Capture up until just recently. The only hardware change i've made is getting two new identical computer monitors.

So, When I have OBS open with minecraft, it really only displays random frames here and there. This isn't lag. this seems like it's downright frozen. What confuses me is when my cursor is available, you can see that moving perfectly and smoothly in the obs display (even over the frozen frames), same with my webcam. This isn't a black screen issue. OBS seems to work perfectly with other steam games. this issue appears to be specific to Minecraft. This video issue is the exact same when I use display capture or window capture.

All the threads I read say the same thing. "Go to Game Capture" This is also not an option. Due to reasons unknown to me, Game Capture absolutely kills my in-game fps.

I'd like to repeat that Display Capture has always worked up until, it seems, when I got my two new computer monitors. This issue just barely started happening. Any help would be appreciated.
