Question / Help OBS unstable. Laggy playback/crashes upon exiting

I have been running into a problem for the last moth or so, prior to this everything has been working great. Recently upon opening OBS and recording, videos just are not recording properly. I am not getting a CPU or encoding overload error, but the recording and playback is incredibly laggy and choppy even though my hardware is more than capable enough for my settings, at least I think. Even though I have been using OBS for years, I am an amateur when it comes to fine tuning and diagnosis issues. I am also having issues where my OBS becomes unresponsive requiring me to force close when I try to exit. I have tried numerous troubleshooting steps including:
  • Updating OBS
  • making sure I have nothing bogging down my system while recording
  • Updating Nvidia Drivers (I have encoder set to hardware, so I though this would help)
  • Checking for updates on Windows (always a good Idea)
  • Updating BIOS (with Ryzen processor they can be a bit unstable so BIOS updates I have been told helps with some issues)

Here is what I am currently running:
  • Windows 10 Pro x64
  • AMD Ryzen 7 1700 3.0GHz (8-core, 16-thread)
  • MSI B350 Tomahawk MOBO
  • Kinston Hyper X Fury 16GB RAM Kit (2x8GB. DDR-4, 1199MHz)
  • Zotac GTX 1060 mini 3GB GDDR-5
  • 120GB Kingston SSD (OBS installation resides here), 2TB Seagate Barracuda (files get recorded here)
I have attached files for all my settings as well as the log file, any help will be greatly appreciated. I'm thinking maybe it is a broken installation, but would rather not reinstall if it can be helped.
