So lately I have been having problems with my OBS recordings. I have been using studio on my computer for a few months and it used to work fine. I streamed Destiny to YouTube with no trouble but lately I started trying to record Minecraft and it wasn't too much in game lag but when I watched the recording it was so glitchy. It wasnt the quality it just wasnt smooth I kept changing my setting and watching many best settings videos. I also took the settings from a few OBS forums and still no luck. I tried classic and same problem. I heard some people say settings varied from what game you are playing but when I went back to start streaming Destiny again it didnt work for Destiny either which it previously did. I tried Destiny with the old settings that used to work and some other settings but it just doesnt work like it used too. Here are my log files.

No, you shouldn't. Those are the NVENC encoder settings, not which GPU OBS is running on. You shouldn't be messing with settings you don't understand.

The recording wont start now

Please post a link to a clean log file. To make a clean log file, first restart OBS, then start your stream/recording for ~30 seconds and stop it again. When you're done select Help > Log Files > Upload Current Log File. Copy the URL and paste it here.

Here are my logs I changed my gpu to one and now my recordings dont start.

According to your latest log file, you're still not running on the nvidia GPU.

Code:
10:35:35.207: Loading up D3D11 on adapter Intel(R) HD Graphics 530 (0)

Can you take a screenshot of the nvidia control panel where you added the OBS executable? Try to include the whole dropdown list.

Here is my screenshot.

You did not follow the guide properly. You added the shortcut, not the executable. You need to add obs32.exe or obs64.exe, which can be found in C:\Program Files (x86)\obs-studio\bin\32bit and C:\Program Files (x86)\obs-studio\bin\64bit respectively. Try adding either (or both, preferably) of these to the list in the nvidia control panel.

I turned on multi platform compatibility and it works thank you.
