Question / Help OBS strangeness

I just got through recording a 1-hour long video in OBS Studio. Except when I pressed "Stop Recording" it got stuck on "Stopping recording" and I had to click exit. OBS Studio then appeared to close, but the process was still hung in task manager. No big deal, I end task, knowing that I was recording to .MKV, which, just like using .FLV, stops the recording from being corrupted if something goes wrong, right? WRONG! The vast majority of the recording was lost, only first 7 seconds remained. I am very angry, since I had a good run through 20XX and was also recording my voice with "let's play" style commentary, and I have had many successful recordings in the past.

Another problem I have, is when I switch OBS from NVENC to x264 and vice-versa... and then try to record or stream, it says "An unspecified error occurred while recording". This problem disappeared after my last reboot, so I have no idea what causes it, and restarting OBS can temporarily fix it when it does happen.

I don't know if this log helps, might be the wrong once since I restarted OBS and even rebooted my PC.

I think what happened was that I had OBS running, and I started up the game. It started in fullscreen which I guess might have broken NVENC... I guess if I'm more careful in the future I might not lose any recordings.
 
The Studio saves last few logs - you can find the actual one (by the date) via main menu Help>Log Files>Show Log Files
